The beauty – and challenge – of organic juice
In recent years, the US has seen a significant increase in demand for cold-pressed organic juices. Cold pressing, a technique which uses hydraulic presses to extract liquid from fresh fruit and vegetables, doesn’t use any additional heat or oxygen like traditional juicers, which means that your fresh juice maintains all its healthy nutrients – and it tastes great!
Fresh juices, however, can present some food safety challenges. Since there is no kill step involved in cold pressing, foodborne bacteria like listeria can survive and make people sick. Proper food safety systems are critical when it comes to fresh juices.
